This one takes about 20 minutes to throw together in the morning, unless you want to use chicken breast instead of ground chicken. If so, cook the chicken the night before and just chop up and add to the crock pot in the morning.
- 1 lb (or more) ground chicken, or 2 chicken breasts cooked and diced.
- 1 onion chopped
- Couple cloves of garlic
- 1 green pepper
- 1 red pepper
- 1 can of baked beans
- 1 can kidney beans
- 1 can chickpeas
- 1-2 cans of diced tomatoes
- 1 cup frozen corn or 1 can of corn
- 1 cup green beans or 1 can of green beans
- 2-4 tsb chilli powder
- Salt and pepper to taste
- You can add other spices depending on your preference (e.g. cilantro, hot sauce, garlic)
Cook chicken breasts the night before or fry ground chicken in the morning. Add onion, garlic, and red and green diced peppers to the frying pan and cook for approximately 5 minutes (or until tender). In the meantime, add baked beans, kidney beans, chickpeas and diced tomatoes to crock pot. If you are using canned corn and green beans add them now as well. Add contents of frying pan to crock pot, along with chilli powder, salt and pepper, and additional spices if desired. Cook 6-8 hours on low, or 4-6 hours on high. If you are using frozen corn and green beans, add them 30 to 60 minutes before you plan on eating. Chicken Chili tastes delicious served over rice and topped with shredded cheese.
